Workshop Details:
Join us for a special IN-PERSON cooking class hosted by Sonoko Sakai in the Los Angeles’ Highland Park neighborhood. The workshop will take place in Sonoko’s kitchen-studio. Together, we’ll make my award-winning Wafu Miso Apple Pie recipe born from cherished childhood memories. As a child, I would wake to the irresistible aroma of my mother's apple slab pies in the middle of the night. After my mother passed away, I worked with my sister and professional pastry chef Fuyuko to recreate our mom’s recipe with a Japanese twist, adding some of my homemade miso to the filling—a "hidden ingredient" that won second place in the KCRW pie contest.
You'll learn to make a flaky, tender crust and prepare a seasonal fruit filling enhanced with handcrafted miso, and master the techniques that bring these elements together We’ll compliment the pie with Amazake ice cream, frozen cherries and freshly baked Sesame Butter cookies. We’ll also share a light lunch with onigiri, miso soup, and Garden Salad with Heirloom Tomato and a Shiso Vinaigrette. All recipes are from my latest cookbook Wafu Cooking.
What to bring:
Comfortable, closed-toe shoes
Apron
Sunhat/Sunglasses/Sunblock/Sweater (October in LA can be unpredictable!)
