Workshop Details:
Join us for a special IN-PERSON cooking class hosted by Sonoko Sakai in the Los Angeles’ Highland Park neighborhood. The workshop will take place in Sonoko’s kitchen-studio. In Japan, soba is traditionally eaten at the very close of the year, the last thing you eat before the new year begins. The noodles themselves represent a bridge between the years. Their length symbolize longevity and long life. The cutting of the dough signifies the cutting away of the bad or pain of the past year. And their simplicity of this noodle (minimally processed, stone-milled, and rich in fiber), provides a cleansing, purifying transition out of one year and into the next. Soba is the perfect food to carry us through this transitional time.
For this class we will be working with freshly milled buckwheat flour, imported specially for me directly from my favorite soba miller in Japan.
During class, we’ll work together to make fresh soba noodles from scratch, entirely by hand. Everything from blending and kneading, to rolling out an evenly thin, blemish-free dough, to hand-cutting into thin noodles, using the knife design expressly for it, a Soba Bocho.
